Oatmeal and egg make a lovely meatloaf binder and are especially nice if you’re trying to avoid a carb crash! Don’t let the healthier profile fool you, they’re delicious! This makes 12 and if you have any leftover, they make a great found breakfast. It’s always better to find breakfast than make it!
Jen’s Turkey and Oatmeal Meatloaf Muffins
1 1/2 pounds ground turkey – I think regular is more flavorful than the breast, but you do you!
4 slices bacon – chopped pretty finely
3/4 cup onion – chopped pretty finely
3 cloves garlic – minced
3/4 cup oatmeal
1 Tablespoon Worcestershire sauce
3/4 teaspoon seasoned salt
1/2 teaspoon pepper
Combine and roll into 12 equal balls. Drop them into a greased muffin tin, flattening a little.
BBQ sauce, Ketchup, or a mixture of the two
Brush your desired topping amount over the tops.
Bake in a 375 degrees F oven til you reach an internal temp of 165 degrees F, about 40 minutes.
