I love cooking all day and night, but in the morning? Nope. I love super easy, lots of flavor, and some nice fuel for the day. If that sounds like you, I think you’ll love these!
Jen’s Lazy Grain-Free Banana Walnut Pancakes
Whisk together in a bowl:
3 cups Birch Bender’s paleo pancake mix (It’s just cassava (a root vegetable), coconut, and almond flour)
2 3/4 cups water
1 teaspoon almond extract (I ran out. You’ll do better.)
2 teaspoons vanilla extract
4 bananas – rougly chopped. A pastry cutter works beautifully. Not too big, not too small….
1 cup walnuts – roughly chopped
Dot an oiled or buttered skillet or griddle with ¼ cup mounds of batter. Flip when golden perfection. Repeat.
Top with extra bananas and walnuts if you’re so inclined.
I like alternatives to syrup, but you do you! Here’s a vanilla sauce with just a little maple.
Coconut Maple Vanilla Sauce
For the sauce, combine, and heat til thick and bubbly, whisking occasionally:
1 can full fat coconut milk
1/4 cup maple syrup
1 teaspoon almond extract
1 teaspoon vanilla extract
1 Tablespoon cornstarch
Hand to someone wonderful. Let them sauce it themself to their desired sauciness level.

I get asked about my spice wall all the time. The magnetic tins on the wall are great for any spices or salt-free blends. Salt corrodes the tins, so anything with salt is in a glass jar on the counter underneath.
My favorite knife. It’s a 7″ full tang Santoku. I chose the Ikon handle design, which is wonderfully ergonomic. I have spent hours on a produce sculpture before and my hand was just as comfy at the end. It’s worth the pennies.
