I get so bummed out for a second when summer ends, then I start thinking about fire pits, leggings, sweaters, apple and pumpkin and I get so excited for fall! I was in the mood for pumpkin pancakes. This are grain-free, filled with tons of pumpkin, and taste like a total treat! The flavor and texture are perfection! Hope you love them!

Jen’s Pumpkin Spice Pancakes – Grain Free!
3 cups Birch Bender’s paleo pancake mix
2 15 ounce cans pumpkin puree
2 cups almond milk – unsweetened vanilla (water’s fine if you prefer!)
2 teaspoons pumpkin pie spice or whatever pie spice you have
1 Tablespoon vanilla extract
That’s it! Spoon them in little smoothed out 1/4 cup mounds onto a greased griddle over medium heat. Flip when golden brown and repeat on the other side til golden brown and firming a bit.

Birch Bender’s paleo pancake mix
My favorite knife. It’s a 7″ full tang Santoku. I chose the Ikon handle design, which is wonderfully ergonomic. I have spent hours on a produce sculpture before and my hand was just as comfy at the end. It’s worth the pennies.

Yum. I used to make pumpkin pancakes for my kids when they were growing up. I just figured it was a vegetable, and a healthy addition to just about anything! It’s amazing what you can put it in, and it’s not green! Great recipe.
