Read MoreWe all love pancakes, but I like to keep grains to a minimum. I’m in love with Birch Bender’s pancake mix. It’s just almond flour, cassava (a root vegetable) flour, and coconut flour. No sugar. Today I made pear and cardamom cakes with pear syrup. Nothing but fruit. No sugar added. Boom! My kiddo said these tasted like Christmas, but I think that’s because I make lovely Scandinavian cardamom pastries every year.
Read MoreThere used to be a place in Hoboken, NJ called Bagel Smashery. They’d stuff the bagels with whatever you’d want, wrap them in foil, and stick them in what I think was a giant tshirt press. I always got mine stuffed with broccoli. So good. The place is closed now, but you can just do it at home. I loved making them when the kids were little because it’s such an easy way to get a kid to happily gobble up a quarter pound of broccoli. Nice. And yeah, if junk food can market to kids, I don’t mind giving produce a little bump. ๐

She waxed on about the sunshine and the views, then in classic Nigella style, switched gears from this idyllic imagery to talking about the best hangover breakfast dish with a smile. <snort> That woman has made me cough on more coffee! They have a dish called โThe Mother and Child Reunionโ. <I know!> Sick joke but amazing dish. Fried chicken and a poached egg over chili cheese grits with a spoonful of bacon gravy. This is my healthy spin on that.

They actually freeze pretty well, so you can skip the avocado, fold them up burrito-style, pop them in a vacuum sealed bag, and take them camping, just reheating in a little skillet over the fire. Skip the bacon if you want a vegetarian version. Hope you love them!
