Smoky. Chocolate. Baklava. I’m listening. Theo Michaels has you smoke chocolate on the stovetop for a few layers in his baklava. Then there’s a few layers of pistachios, hazelnuts, walnuts, and cinnamon. Encased in flaky, buttery phyllo. Obviously, that needed to happen. I have one of those big old macho smokers in my backyard, so I smoked the chocolate in there. Then I made it a second time baking the whole baklava right in my smoker. Yeah. This is an amazing book and has major gift potential for any wine enthusiast. As the title promises, this book will teach you all about wine appreciation. It’s a huge volume, and intimidating at first glance, but really actionable once you dive in. He’s thorough and it’s chock-full of interesting tangents and random factoids to delight even the very geekiest among us.
You’ll know exactly what bottle to bring for any dinner party. Guest like a boss!
I jokingly apologized to my husband for the havoc I was about to wreak on our bank account playing in this book. We took the book to the Total Wine down the street, sticky notes flapping from the pages we were starting with, excited to embark on the world’s best scavenger hunt for grown-ups. Greek Salad is one of my favorite things in the whole wide world. I love it filled with chopped vegetables, some sort of topping, and usually skip the romaine. The kids love it, too, but I always saw dishes in the sink with raw onions framing the empty plates. In salads all over Latin America, onions are soaked in vinegar to cut their sharpness. I started tweaking my notes. The plates in the sink are totally naked now.
Below, I’ll give all my variations, starting with my seasoning blend, a raw or grilled salad base, then 5 toppers to pick from. Two are vegetarian, two are for carnivores, and one for pescatarians.
