Instant Pot Miracle is a super neat Instant Pot book with a huge range of Instant Pot recipes. It’s pretty much one stop shopping. We loved everything we tried. Note that we found the salt measures really light, and generally doubled the salt. You can tailor the sauciness level afterwards by pulling out the meat or whatever and reduce the sauce to your perfect level using the saute button.

We loved the Mojo-Marinated Cuban-Style Pork, so I wanted to share that recipe with you. It marinates for a day before you make it, so be sure to budget the time. The flavors are spot on. Delicious! I served it with rice and sweet plantains.

Mojo- Marinated Cuban-Style Pork

SERVES 8 TO 10

The bright, fresh flavors of Cuban mojo [MOH-hoh]—a sauce of cilantro, orange, garlic, oregano, and cumin—offer a way to enjoy pork shoulder apart from the more common BBQ-sauced version.

PREP TIME: 30 minutes FUNCTION: Meat/Stew CLOSED POT TIME: 1 hour 5 minutes RELEASE: Natural TOTAL TIME: 1 hour 35 minutes + 24 hours marinate

1 cup tightly packed fresh cilantro leaves, coarsely chopped
1 tablespoon finely shredded orange zest 
3/4 cup freshly squeezed orange juice  
1/2 cup freshly squeezed lime juice  
1/4 cup mint leaves, coarsely chopped 
8 cloves garlic, peeled and minced  
2 teaspoons dried oregano  
2 teaspoons ground cumin
1 teaspoon salt (I used 2 2/3 teaspoons – Jen)
1 teaspoon black pepper  
1/2 cup extra-virgin olive oil
1 4-pound skinless, boneless pork shoulder, trimmed of excess fat

PREP

In a large nonmetal bowl combine cilantro, orange zest, orange juice, lime juice, mint, garlic, oregano, cumin, salt, and pepper. Mix well; reserve 1/2 cup of the mixture for the finishing sauce; cover tightly and store in the refrigerator.

Add olive oil to remaining mixture in bowl. Pierce meat in several places with a small thin knife or skewer. Immerse pork shoulder in marinade, turning once to coat. Cover tightly; refrigerate for 24 hours.

Remove pork from marinade; discard marinade. Place pork in the Instant Pot®. Secure the lid on the pot. Close the pressure-release valve.

COOK

Select meat/stew and adjust cook time to 45 minutes. When cooking time is complete, use a natural release to depressurize.

SERVE

Transfer pork to a cutting board. Slice thinly and arrange on a serving platter. Drizzle with reserved marinade.

General Tso’s Chicken. Great General Tso’s chicken at home. I served it with roasted veggies and rice.

Carrot Ginger Soup. Fabulously refreshing, clean taste and it’s super quick. Easy, flavorful, produce-filled side. Total keeper.

Mojo-Marinated Cuban-Style Pork. We loved this!!! It marinates for a day before you make it, so be sure to budget the time. The flavors are spot on. Delicious! I served it with rice and sweet plantains.

Kitchen-Sink Pot Roast. We loved this! Great pot roast. I don’t usually put kale in pot roast, and to our delight, it really added something. 

One-Pot Instant Lasagna. This is a fun, super quick, and lazy lasagna. It tastes great, too. There was no salt or garlic in the recipe, so I added those in. This is a really fun base lasagna that I plan to play with. Next time, I’m wilting baby spinach into it at the end.

Three-Cheese  Bacon-Scallion Crustless Quiche. Lovely flavor and texture.

Barbacoa-Style Shredded Beef. All the yes! Gorgeous flavor and it makes the chuck so tender. This uses the Instant Pot in slow cooker style, so make sure you have 6 hours budgeted.

Grown-Up Sloppy Joes. These are terrific. Barely any sugar and a little stout beer, so they’re deeply flavorful without being too sweet. They were supposed to be on buns, but I decided to serve it chili style with air fried sweet potatoes and fruit. You need to budget 5 hours for the slow cooker function.

Spanish Arroz con Pollo. Yum! Really easy and yummy Arroz con Pollo.

Pork Chile Verde. This is great, too. There are a lot of fresh, not overly hot chiles in the dish. Definitely flavor over heat.

Instant Pot Miracle

My first pressure cooker was a 6 qt Cuisinart. Very nice. Then I came across a recipe that wouldn’t quite fit. So I bought an 8 qt Instant Pot. They’re both awesome.

  1. Those sloppy joes look interesting. I don’t usually add sugar to ours, but a little molasses maybe. They shouldn’t be *very* sweet, but a little sweet.
